The healthy cheats way to a quick, simple, to the point recipe, when your run off your feet with kids like me. You can still enjoy food even if it’s home fast food as I call it. It cooks itself.
Choose a protein you can throw in the oven to cook alongside the potatoes.
Grab a packet of coleslaw, no sauce included as your going to make your own sugar free!
You can opt to top your potato with 1/2 tsp butter with a touch of garlic mixed in, homemade yoghurt sauce (in replacement of sour cream, though you can have a tablespoon of this if you prefer), light tasty cheese and lemon pepper.
I do prefer red potatoes or russet potatoes as they cook quicker, softer and fluffier once baked.
I served alongside marinated chicken pieces. Big hit with the kids!
Serves 4
INGREDIENTS
- 4 potatoes, washed and dried
- 1 x 400g pkt coleslaw (raw, no sauce)
- 1 x 200g tub Greek yoghurt
- 1/2 tsp crushed garlic
- 1/2-1 tsp lemon juice
- Olive oil spray
- Optional: 100g grated light tasty cheese, 2 tsp butter with /1/4 tsp crushed garlic and mix together, lemon pepper.

METHOD
Heat oven on 180 Deg C.
Spray olive oil on baking tray.
Skewer a few holes in each potato.
Place potatoes on one side, meat or protein on the other. Bake for 45 minutes to 1 hour, depending on size of potatoes and type of meat. Turn both meat and potatoes over halfway through cooking. See it cooks itself!
Then simply, empty the bag of coleslaw in a bowl.
In a separate bowl, mix Greek yoghurt, crushed garlic and lemon juice together. Refrigerate until potatoes and meat are cooked.
Use a knife or skewer to test the potatoes are soft inside.
Once cooked, place potatoes on plate, cut in quarters but not through the bottom.
Now add yoghurt sauce, coleslaw and lemon pepper or coleslaw then yoghurt sauce. (We all have our own way of how we like to add toppings in order!)
If your adding optionals, butter first so it melts.
How easy is that! Throw dinner in the oven, whip up sauce and mix with pre-packaged coleslaw, run the kids around then wulah! Simply serve and enjoy. It really doesn’t get any easier!
