Healthy Rice Pudding

Instead of freezing left over rice I decided to make a dessert. I’m so glad I did! Yum!

I simply grabbed an oven proof baking dish, put about 2 cups cooked boiled rice in it.

In a bowl, 2 large eggs (at least 700g), or 3 small eggs and whisk.

Add 1/2 cup skim milk or preferred, 1 tsp cinnamon, 1/4 tsp dry ginger, 2 tsp organic Stevie powder (sweetener), a few drops vanilla essence and mix together. Add a handful of sultanas. Pour over the rice and evenly mix through with a spoon.

Bake for 30 min on 180 deg C. It is cooked when the milk has absorbed and slight browning has occurred on top.

To serve sprinkle over some cinnamon, yoghurt, cream, berries, whatever you like. You could even drizzle maple syrup or honey!

Only around 130 cals per serve!

You could split the dish into 4 servings, that’s 195 calories per serve!


  • 2 cups cooked rice
  • 2 x 700g eggs or 3 if smaller
  • 1-2 tsp organic stevia powder, depending how sweet you like things
  • 1/2 cup skim milk
  • 1 tsp cinnamon
  • 1/4 tsp dry ginger
  • vanilla essence, a few drops
  • 1/4-1/2 cup saltanas

Serve hot, cold or reheat. Its delicious anyway you eat it!
