Vegan Coconut Cups

Even if your not a fan of coconut, you will be a fan of these! Super delicious, sweet and can be made with fully organic ingredients.

With kids being home and wanting to eat all the time, I’ve been on a mission making healthy treats. I did change a couple of ingredients, measurements however these have been a real hit! I’ve also tried with non vegan ingredients which I’ll pop in the recipe, in case you have non vegan ingredients in your fridge.

The bonus with these is you simply blend and set! So simple, my children helped make them! Perfect opportunity for learning about healthy foods too. Besides being vegan, they are nut free, dairy free (vegan version), refined sugar free, gluten free, low carb and high in fibre.

Serving size: 8 small snacks or 4 muffin size desserts

Ingredients

Chocolate layer

  • 100g pitted dates, (about 13-14)
  • 30g unsweetened shredded coconut, (5 tblsp)
  • 4 tblsp cocao or cocoa powder
  • 5-6 tblsp maple syrup, (or other liquid sweetener)
  • Coconut spray oil, to grease muffin moulds

Coconut layer

  • 1 cup unsweetened shredded coconut
  • 2/3 cup coconut yoghurt (or plain Greek, non vegan)
  • 3 tblsp maple syrup, (or other liquid sweetener)
  • 2 tblsp coconut oil, melted

Method

Cut dates in half to ensure there are no seeds.

Place all chocolate layer ingredients in a food processor and blend until combined well but a soft, slightly crumbly mixture.

Spray lightly silicon muffin cups (can use normal muffin sprays) with coconut oil spray. Extra virgin olive oil can be used. This makes it easier to remove the coconut cups.

With a spoon, seperate mixture evenly into muffin moulds and press down firmly. Set aside or place in the fridge.

For the coconut layer, place all ingredients into a blender and mix well.

Spoon the mixture evenly over the coconut cup chocolate bases. Lightly press down so it can set on the chocolate layer.

Place in the freezer for at least one hour to set.

Allow to thaw a little to serve.

These can be stored for 2 months in the freezer or 6 days in the refrigerator.

Eat on their own, serve with fruit or berries as a dessert. Either way these are seriously delicious!
