An easy salad full of colour and flavour to go alongside any meal. So simple to make even the kids can make it!
This salad can also be eaten as a main meal by adding lean meat, feta cheese, lentils, nuts or your preferred protein sources.
A salad that includes important vitamins and minerals that’s perfect for the upcoming Spring and Summer barbeque weather!
(Make as much salad as you require. You may need to make 2 batches of dressing if using large amounts. If so be sure to use the ratios in the dressing recipe).
Mixed lettuce and spinach leaves
Red quinoa, cooked (can use white or black, white is softer)
Diced fresh tomato
2 tsp parsley
1/8 cup olive oil
1 tsp garlic minced
1 lemon squeezed, juice only
1 tsp organic stevia sweetener
Option…serve with fresh mint.
Wash and prepare salad ingredients and add to a large bowl.
In a separate bowl, mix dressing ingredients.
Mix dressing throughvsalad when ready to serve.
