Rice Bubble Chia Slice

A perfect solution or alternative when the kids are wanting something sweet or your looking for ideas for school or even if you have a sweet tooth yourself!

Only natural sugar from honey for sweetness and the goodness of chia seeds. Chia seeds have been added for ‘good fats” and protein to go along with the carbohydrates in the organic puffed rice. Organic puffed brown rice is high in good fats and extremely low in bad saturated fat, are gluten free, high in fibre and have nothing added to them. They are simply, brown rice kernels air blown with heat. A much better option to traditional white puffed rice cereals where a lot contain added sugars.

Diabetics can opt for rice malt syrup and natural sweetners. When sending the slice pieces to school, put them in a lunch box or container alongside lunch ice cube blocks to keep them cold.

Rice bubble chia slice.
Serves 16

  • 4 cups organic rice bubbles (preferably brown puffed rice)
  • 6 tbl natural honey
  • 6 tbl organic coconut oil
  • 2-3 tbl mixed black & white chia seeds

In a pot or microwave, melt together the honey and coconut oil.

In a large bowl mix chia seeds with puffed rice.

Pour melted honey and oil into puffed rice bubbles and mix through with a spoon gently. You dont want to crush all the rice bubbles!

You can opt to add cranberries or dark choc chips but I just kept this simple.

Place mixture in a baking tray lined with baking paper or sprayed with olive oil.
Press mixture in to form a solid slice.

Refrigerate overnight.

Keep the slice cold as when it warms up the oil begins to melt and slice will fall apart.

Top with melted dark chocolate if you wish when slice is cold and refrigerate to set.

Cut into 16 square pieces when ready to serve.
