Lemon Coconut Balls

A healthy treat for the children and for the adults! Quick, easy and no baking required! Don’t you love that when your a busy parent! Or person for that matter!

A sweet treat with a hint of lemon, the taste of coconut blended with honey and coconut oil.

Serves 18

Ingredients

  • 3/4 cup almond meal
  • 1 1/2 cups desiccated coconut PLUS 1/2 to roll balls in
  • 1/4 cup LSA (Linseed, Sunflower & Almond)
  • 2 tbl organic golden faxseed meal
  • 4 1/2 tbl coconut oil, melted
  • 2 lemons, juice and zest of 1 lemon
  • 2 tbl organic honey 

Optional: You can use 2 scoops of pea protein powder rather than the flaxseed meal.  You can also replace some coconut with almond meal if you prefer a less coconut taste.

Method

In a large bowl mix together the almond meal, 1 1/2 cups coconut, LSA and flaxseed meal. 

Squeeze the juice from 2 lemons and set aside. Grate and keep zest of 1 lemon.

*For a stronger lemon taste, use zest of both lemons.

In a pan or microwave melt the coconut oil and honey together.

Pour in the melted oil and honey and stir, then add the lemon juice and zest and stir until combined into a dough.

On a clean dry board or bench, sprinkle over the 1/2 cup desiccated coconut in a small pile.

Roll balls from dough, about 3 cm in diameter. Roll in coconut to coat.

Store in an air tight container in the refrigerator. Keep for up to a week. After a week they tend to start drying out.
