Having guests over for dinner? Needing a delicious dessert but want to save on calories?
Here’s a quick easy option that reduces calories by over half of your traditional tarts and pies.
I used reduced fat puff pastry as I found this had the least amount of calories. Therefore less calories per slice, as I had to have one! I needed a quick healthier version!
So here it is!
8 serves of this open pie is 100 calories. (28 cm round tray)
Ingredients
- 1 1/2 sheets reduced fat puff pastry (the 1/2 is only if you use a larger tray to fill in base gaps)
- 1 can peaches in juice (not syrup, can stew fresh ones yourself )
- 1 can stewed apples, 100% ( or stew fresh yourself)
- Fresh blueberries, to top
- 1-2 tsp cinnamon
- Extra Virgin Olive Oil Spray
Method
Preheat oven to 180 degrees Celsius.
3 second spray to tray base to avoid the pastry sticking.
Place 1 sheet of pastry over the tray. If using a larger tray or sheet doesn’t cover all edges use the extra half a sheet to fill it in. Pressing into the joining piece so it’s secure.
Fold edges of pastry in to create a round edge and side crust.
Mix peaches and apples in a bowl together then spread over pastry sheet.
Sprinkle over blueberries.
Sprinkle over cinnamon.
Bake for around 20-30 minutes in a fan forced oven, depending on how much fruit you put on. Note: Fruit needs to be stewed, from a can or soft when entering the oven. Hard fresh fruit wont cook in time and the pastry will burn.
Optional topping:
Greek yoghurt
Light whipped cream
Healthy homemade ice-cream
You can also add strips across the top as in above picture but you will also have to add the calories!
