Now who would think of having pumpkin for breakfast right? Well you can make this pumpkin spice smoothie with or without pumpkin puree.
A deliciously light, refreshing, spiced recipe will have you licking your lips for more!
Adding 1/4 cup pumpkin puree will increase your fibre intake and other important nutritional substances. Pumpkin is a highly nutrient-dense food and is rich in vitamins and minerals and low in calories. Perfect!
However if you just cant do vegetables at breakfast time, try having it at lunch time or follow the recipe below for a simple pumpkin spice smoothie.
Pumpkin Pie Spice Mix
3 tbl ground cinnamon
2 tsp ground ginger
2 tsp ground nutmeg
1 1/2 tsp ground all spice
1 1/2 tsp ground cloves
*There are recipes available for pumpkin pie spice however they all have the same ingredients but may vary in measurement. You can adjust to your preference in taste.
Mix all ingredients together in a bowl.
Store in an air tight jar.
Pumpkin Pie Spice Smoothie Recipe
250 ml milk (preferred milk, skim, whole)
1/2 cup plain Greek yoghurt or cottage cheese (if you prefer thicker)
1 tbl maple syrup (sugar free or 100% pure- more calories though)
1/2 tsp organic vanilla essence
Place all ingredients in a blender and mix until smooth.
Serve topped with cinnamon, cocao nibs, pumpkin seeds, the choice is yours!
Will serve 2 medium glasses or 1 large milkshake glass.
