2 main ingredients is all you need plus extra virgin olive oil to cook them in. This recipe has baking powder to make fluffier but you can omit it.

I made double of this recipe to have pikelets as snacks for us as a healthy go to option. I usually have home made raspberry or strawberry jam or maple syrup (sugar free or 100% pure Canadian) with berries. A big hit with the kids!
For 1 Mix making 4 large or several pikelets.
Banana and Egg Pancakes
- 2 large bananas
- 2 free range eggs
- 1/2 tsp baking powder
- 3 sec spray of Extra Virgin Olive Oil or 1 tsp liquid
Squash bananas with a fork until mashed smooth.
Mix in egg until well combined.
Add baking powder and mix through.
Preheat pan on med-high then add batter and cook on low heat.
Cook 1 min each side or until batter starts to form bubbles.
Serve with your healthy favourite toppings of fruit, berries, light ricotta cheese, or a drizzle of honey or maple syrup.
Refridgerate leftovers or pikelets and to keep for a healthy snack.
