Peanut Butter Choc Chip Cookies

Even if you don’t like peanut butter you will love these!

Only 113 calories per biscuit!

The kid’s will love helping make these too!

Makes 14 biscuits.

Ingredients:

  • 3 tablespoons of crunchy peanut butter
  • 2 tablespoons of vegan butter or butter
  • 100g brown sugar
  • 100g (spelt flour but you can use wholemeal flour if you want)
  • ½ teaspoon of baking powder
  • A handful of dark chocolate chips or chopped dark chocolate chopped

Method

Preheat your oven to 175 degrees Celcius.

Mix butter with an electric whisk. Add the sugar and mix again.

Add flour and baking powder and mix again. Finally stir in the dark chocolate chips.

With your hands, form small balls and place hem on a baking sheet lined with baking paper.

I halved the mixture to have peanut butter and chocolate flavour. 
I added 1/2 tsp cocao to the 2nd half of the mix with 1/4 cup skim milk as the cocao dries it out a bit, mix in and form balls. These are scrumptious!

Press the top of the cookie dough balls down with a fork (they won’t spread otherwise) and bake for 15-20 minutes. Allow room as they do spread (I cooked the chocolate ones a little longer as they contained the added milk)

You can cook these to your liking, shorter time for chewy or longer for crunchy.
Don’t burn them though! They are too good to waste and go perfect with a cup of tea or coffee!
